Abalone Pan Fried

Ingredients
1 lb fresh abalone steaks
1 egg
½ cup milk
1 cup panko bread crumbs
Oil for frying (enough for ½" depth in pan)
Directions:
1. Prepare the Egg Wash
In a medium bowl, whisk together the egg and milk until well combined.
2. Set Up Breading Station
Pour panko bread crumbs onto a large plate and shake gently to spread them evenly.
Organize your setup: abalone cutlets, egg wash, and bread crumbs in a line.
3. Bread the Abalone
Dip each abalone steak into the egg wash, ensuring it's fully coated.
Let any excess liquid drip off.
Press both sides of the cutlet into the panko crumbs until evenly coated.
Set aside on a clean plate.
4. Heat the Oil
In a medium skillet, pour oil until it’s about ½ inch deep.
Heat over medium to medium-high — the oil should be hot but not smoking.
5.Fry the Cutlets
Working in batches of 2–3 cutlets at a time, carefully place the breaded abalone into the hot oil using tongs.
Fry for 1–2 minutes per side, just until golden brown. Avoid overcooking to keep the abalone tender.
6.Drain & Serve
Transfer the fried cutlets onto a paper towel-lined plate to drain excess oil. Pat gently with another paper towel to remove surface oil.
