Abalone Stew

Ingredients:
½ lb fresh abalone trim (skirts), chopped
¼ cup oil
1 cup onion, chopped
½ cup mushrooms, sliced
½ cup green peppers, chopped
7 oz can tomato sauce
¾ cup water (plus more as needed)
1½ cups potatoes, diced
½ cup celery, chopped
½ tsp salt
⅛ tsp pepper
¼ tsp dried dill weed
Directions:
1. Sauté the Aromatics
In a large saucepan, heat oil over medium heat. Add chopped onion and cook until translucent.
2. Add Vegetables
Stir in mushrooms and green peppers. Cook for an additional 2 minutes, stirring occasionally.
3. Simmer the Base
Add the tomato sauce, water, diced potatoes, and celery. Season with salt, pepper, and dill weed.
Simmer for approximately 7 minutes, or until the potatoes are nearly tender. Add a splash more water if the mixture gets too thick.
4. Add the Abalone
Stir in chopped abalone trim. Reduce heat to low and cook gently for 5–10 minutes, or until the abalone is tender and the stew is fully flavored.
