Albacore - Bacon Wrapped Medallions

Ingredients
(4) 8 oz albacore loin steaks (boneless, skinless, 1–1.5 inches thick)
1 lb bacon strips
¼ stick butter
½ cup soy sauce
½ cup sake (Japanese rice wine)
2 tbsp lemon juice
1 tbsp fresh ginger, peeled and grated
1 tsp minced garlic
2 tbsp brown sugar
Dash of freshly ground black pepper
Directions
1. Prepare the Albacore
Rinse the albacore steaks under cold water and pat dry with paper towels.
Wrap each steak with 1–2 strips of bacon, securing with toothpicks. Place in a shallow glass dish and set aside.
2. Make the Marinade
In a microwave-safe container (like a Pyrex measuring cup), combine the butter, soy sauce, sake, lemon juice, ginger, garlic, brown sugar, and pepper.
Microwave on high for 1 minute. Let stand for 1 minute to allow flavors to meld.
3. Marinate the Steaks
Pour half of the marinade over the albacore medallions. Let marinate at room temperature for 15 minutes.
4. Grill the Medallions
Preheat and oil a clean grill.
Grill the medallions over medium-high heat for about 6 minutes on the first side.
Flip the steaks, then drizzle the remaining marinade over the top.
Grill an additional 4 minutes, or until the bacon is crisp and the fish is just cooked through.
Serve
Remove from heat and rest briefly. Serve hot with steamed white rice and crisp steamed broccoli.
