Hamachi Sashimi with Curry Oil
1 pound Hamachi Fillet
1/4 cup chopped chives
Kosher salt
Fresh cracked black pepper
1/2 tbsp ginger
Soy syrup (see below for recipe)
1/4 cup curry oil (see below for recipe)
Cooking Directions:
Wrap fish in plastic wrap and pound flat using the bottom of a saute pan. Remove plastic wrap from fish and plate. Sprinkle with chives, a pinch of salt and black pepper. Drizzle a little soy syrup. In a small saute pan, heat the curry oil very hot. Add the ginger in the pan. Immediately spoon 1 tbsp of hot oil onto fish. The fish should sizzle where the oil hints. Serve.
Soy Syrup Recipe
2 cups thin soy sauce
1/2 cup brown sugar
Juice from 1 lime
Combine all ingredients and reduce at a simmer until a syrup consistency is achieved. Let cool.
Curry Oil Recipe
1/4 cup curry powder
Water
Pinch of Salt
1 cup canola oil
Make paste and slowly add oil. Let stand for 1 hour.
