Herb Crusted Salmon


4 salmon fillets
2 tablespoons Dijon mustard
2 tablespoons finely chopped fresh parsley
1 tablespoon finely chopped fresh dill
1 garlic clove, minced
1/4 cup whole wheat breadcrumbs
Lemon wedges, for serving
Salt and pepper to taste
Olive oil

Preheat your oven to 400°F (200°C).
In a small bowl, mix together the parsley, dill, garlic, and breadcrumbs.
Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
Spread a thin layer of Dijon mustard on top of each fillet.
Press the herb-breadcrumb mixture onto the mustard layer.
Drizzle a bit of olive oil over the fillets.
Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden.
Serve with lemon wedges for a fresh, zesty finish.
