Scalone Burger with Chipotle Remoulade
1 each Scalone Steak (frozen or partially thawed)
1 tbsp Cooking Oil
1 1/2 cup Mayonnaise
3 tbsp chopped Cilantro
2 1/2 tbsp Lime Juice
2 Chipotle Chiles from the can, chopped
1/2 tsp Salt
1/4 tsp Black Pepper
1 Onion Burger Bun
2 slices of Hot House Tomato
1 slice of Red Onion
1 piece Green Leaf Lettuce
1/4 of an Avocado
1. Before grilling, make the chipotle remoulade. In a bowl, add mayonnaise, chopped cilantro, lime juice, chopped chipotle chilies, 1/4 tsp salt and black pepper. Mix well and set aside in the refrigerator.
2. Set grill to high heat. Clean the grill and season with 1/2 of the cooking oil.
3. Take the frozen scalone steak and place on the seasoned grill. Cook over high heat for 3 minutes. When the ice begins to melt, season with remaining 1/4 tsp of salt. Flip scalone steak over, and cook an additional 4 minutes, until internal temperature reaches a minimum of 145 degrees F. Remove from grill to assemble.
4. To assemble the burger, take the onion bun and add one tbsp of chipotle remoulade to the top and bottom. On the bottom half, layer the green leaf lettuce, tomato, and red onion. Place the scalone steak on the red onion. Finish with avocado. Top the burger and serve warm. Refrigerate remaining chipotle remoulade.
