Thresher Shark in Spicy Tangerine Marinade


2 pounds Thresher Shark (cut into four 8 ounce pieces)
6 ounces Orange Juice
2 bunches spinach, trimmed and washed
1 round red garnet yams, peeled and sliced into disks, about 1/4 inch thick
Kosher salt and freshly ground black pepper
Spicy Tangerine Marinade (see below)

1 tbsp grated tangerine or orange zest
1 tbsp thin soy sauce
1 tbsp Chinese rice wine
1 tbsp cooking oil
1 tbsp honey
2 tsp Asian chili sauce

Cooking Directions

Prepare the tangerine marinade by mixing all the ingredients together. Marinate thresher shark in the marinade for 2 hours. Cook thresher shark on preheated barbecue grill for about 5 minutes per side. Let thresher shark rest for 2 minutes. Cover loosely with foil. Place marinade in a small sauce pan, add orange juice and place on the grill. Cook into it comes to a boil, set aside. Plate thresher shark and top with spicy tangerine sauce and serve with spinach and grilled yams.
