Ahi Tuna Pan-Seared Sesame-Crusted

Ahi Tuna Ingredients
4 Ahi tuna steaks (6 oz each)
¼ cup black sesame seeds
¼ cup white sesame seeds
1 tsp salt
Freshly ground black pepper
2 tbsp vegetable oil
2 avocados, thinly sliced
Mixed salad greens
Wasabi Mayonnaise Ingredients
2 tbsp wasabi powder
2 tbsp water
½ cup mayonnaise
Mix wasabi powder with water to form a paste. Stir into mayonnaise until fully blended. Set aside.
Anago Sauce Ingredients
6 tbsp soy sauce
4 tbsp mirin
2 tbsp brown sugar
Combine soy sauce, mirin, and brown sugar in a small saucepan. Bring to a boil, then reduce to a simmer and cook until slightly thickened. Let cool before using.
Tuna Preparation
1. Crust the Tuna
In a bowl, combine black and white sesame seeds, salt, and pepper. Press tuna steaks into the mixture, coating all sides thoroughly.
2. Sear the Tuna
Heat vegetable oil in a large, shallow frying pan over high heat. When the oil is hot (a test sesame seed should sizzle), carefully place 1 or 2 tuna steaks in the pan.
Sear flat sides for less than 1 minute.
Sear short sides for about 20 seconds, using tongs to hold the fish gently.
3. Slice or Serve Whole
Remove from pan and rest briefly. Slice into ½-inch thick pieces at an angle, or serve steaks whole as desired.
To Serve
Arrange sliced avocado over a bed of salad greens. Place the sliced or whole tuna steak on top. Drizzle with wasabi mayonnaise and anago sauce. Serve immediately.
