Combining the lightness of snapper with the robust flavors of tomatoes, Kalamata olives, capers, and oregano, this dish is a testament to the versatility and delight of seafood.

Mediterranean Snapper


4 snapper fillets
2 tomatoes, chopped
1/4 cup Kalamata olives, pitted and sliced
1/4 cup capers
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
Fresh parsley, chopped for garnish
Salt and pepper to taste

Preheat the oven to 375°F (190°C).
In a bowl, combine tomatoes, olives, capers, garlic, oregano, and a tablespoon of olive oil.
Season the snapper fillets with salt and pepper.
Place the fillets in a baking dish and top with the tomato-olive mixture.
Drizzle the remaining olive oil over the top.
Bake for 20-25 minutes, until the snapper is flaky and cooked through.
Garnish with fresh parsley before serving.
